By protection, I mean from someone who's trying to hurt you.

You need to cry out to Jesus and only Jesus. In times of trouble or whatever He is the one petitioning the Father on our behalf. Pray for His protection and guidance. That's all you will ever need.

A devotional prayer video to one of my Patron Saints, St. Michael the Archangel.

I don't, but here is a dentist's prayer I've seen a few times.

A Dentist Prayer

Lord, be with me each day as I practice dentistry. May I treat with gentle care all who place their trust in me. May my calm assurance help to ease my patients fear and to relax a tense adult or to dry a child's tear. May I treat each person with competence and skill, whether a difficult procedure or a tooth that I must fill. As I diagnose and treat, be with me all the while. And reward me with the beauty of my patient's lovely and healthy smile.

I'd like to pray to a Patron Saint but do not know how to go about it. I know this is a weird question but how do you pray to One? I have the Novena prayer to the Saint I chose so I know that I have to recite that but after my prayer is answered ( I hope it is) I know you have to "thank" (not the right choice of words) the Saint. How do you go about doing that?

a Patron saint is not going to answer your prayers. you have to pray to God in the name of Jesus if you expect to get answers.

What is a good prayer to say for protection?

Each person has his/her own guardian angel that is assigned to protect/guide. The prayer to your guardian angel is: "Angel of God, my guardian dear, to whom God's love entrusts me here. Ever this day be at my side to light, to guard, to rule and guide."
